For over a decade, Montefino has been producing high-quality cheeses with the technical expertise of Quality Cheese Consulting and the financial support of the Municipality of Merksplas. The goal has always been clear: to improve the living conditions of rural families in the Ayacucho region through sustainable dairy entrepreneurship.
From Traditional to Award-Winning
Montefino began by producing traditional local cheeses such as Queso Andino, Queso Fresco, and Queso Paria. Thanks to ongoing training and innovation, their range now includes international varieties like Gouda, Edam, Parmesan, and Mozzarella. The Montefino brand has since earned multiple regional and national awards, a true testament to the quality, passion, and craftsmanship of the local cheese makers.
A Domino-Effect in the Andes
The success of Montefino has sparked inspiration among neighboring farmers and entrepreneurs, transforming Ayacucho from a region previously unknown for its cheese into a rising hub of artisanal dairy excellence.
During our visit, we organized a hands-on cheese-making workshop at the Montefino facility, inviting cheese makers and dairy producers from across the region. The workshop saw a strong turnout and lively collaboration, showing the growing enthusiasm and solidarity within this developing cheese community.
